Chicken Bread rolls are a classic evening snack! These Cheesy Chicken bread rolls are filled inside soft and fluffy bread rolls, egg washed and seasoned with sesame seeds and baked until golden brown. It can be made in various different ways which will make for a mouth-watering and filling snack; perfect for afternoon tea or served as an appetizer.

Chicken Bread rolls are a classic evening snack! These Cheesy Chicken bread rolls are filled inside soft and fluffy bread rolls, egg washed and seasoned with sesame seeds and baked until golden brown. It can be made in various different ways which will make for a mouth-watering and filling snack; perfect for afternoon tea or served as an appetizer.

Ingredients
  

Dough mixture:

  • 300 g All purpose flour
  • 1 tsp Salt
  • 2 tsp Oil
  • 9 g Dried yeast to be activated
  • Lukewarm water enough to bind ingredients together

Bread roll filling:

  • Oil for cooking
  • 2 Medium sized onions cubed
  • 2 Bell peppers cubed
  • 1 cup Sweetcorn
  • 500 g Chicken breast shredded
  • 1 cup Milk
  • 1 ½ tsp Chilli flakes
  • 1 Heaped tbsp salt
  • ½ tsp Turmeric
  • 1 tsp Black pepper
  • Grated cheddar cheese

Toppings:

  • Egg or milk for glazing
  • Sesame seeds

Instructions
 

  • In a bowl, add in your flour, salt, oil and activated yeast. Mix thoroughly.
  • Add lukewarm water to the flour mixture, a little bit at a time, enough to bind the dough together. Knead the dough for 3-4 minutes until it all comes together. TIP: The dough should be firm NOT sticky. When you press your finger down on the dough it should bounce back.
  • Add a drizzle of oil on top of your dough and then cover and store in a warm place for 1 hour until it rises.
  • In a pan over medium heat, add in oil and your onions. Cook for 2 minutes until the onions brown slightly.
  • Then add in your peppers, sweetcorn and chicken and mix for 3 minutes until well combined.
  • Then add in 1 cup of milk, keep mixing until the mixture binds together.
  • Then add the following spices, chilli flakes, salt, turmeric and pepper. Mix until well incorporated.
  • Remove the mixture from the heat and allow to cool completely.
  • Roll your dough into a rectangle, add a heaped tbsp of the mixture in the centre of your dough. Sprinkle a little bit of cheese on top.
  • Fold the edges and gently roll into a wrap. Make sure to roll tightly.
  • Egg wash and sprinkle some sesame seeds on top.
  • Proof for a further 30 minutes (preferably in a warm place)
  • Then bake for 25-30 minutes on gas mark 5 until golden brown in colour.
