Rasmalai is a popular Pakistani dessert made with milk, a curdling agent, sugar, nuts, saffron and cardamom. But I’m here to make it slightly more simple; by using a few shop bought ingredients which you can whip up in less than an hour.Yes, it might not be the traditional rasmalai but I guarantee you’ll be making this a handful of times during the summer.
Its the iconic Madeira cake submerged in a sweet sauce infused with pakistani spices then bedded with a light cream layer topped with fresh fruits; simple but yet so delicious!

RASMALAI DESSERT CUPS
Ingredients
Ingredients:
- Shop brought Madeira cake cubed
- 200 ml Evaporated milk
- 200 ml Condensed milk
- 200 ml Milk
- 6 Cardamom seeds
- Handful of fresh strawberries/berries finely chopped
- 250 ml Double cream
- 8 tbsp Icing sugar
- 1.5 tbsp Vanilla essence
Optional:
- Chopped pistachios
- Rose petals
Instructions
- Warm the following ingredients; condensed milk, evaporated milk, milk and cardamom seeds for 4-5 minutes until warm. Remove the cardamom seeds once it’s heated.
- Cut the Madeira cake into slices and add to dessert glasses. Soak the cake with the milk mixture.
- Repeat both these steps repeatedly until it fills 3/4 of the dessert cup.
- Add cut pieces of fruit and place into the cups on top of the soaked cake.
- In a bowl, whisk together double cream with 8 tbsp of icing sugar and vanilla extract until it forms stiff peaks.
- Pipe cream on top of your dessert cups and garnish with either pistachios, madeira cake crumbles, strawberries etc.
- OPTIONAL BUT RECOMMENDED: Refrigerate overnight before serving to make sure it sets properly.
